Instructions

  • Prepare Your Setup: Preheat the oven to 350°F and grease a 9x5-inch loaf pan, lining with parchment paper with overhanging edges.
  • Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, and salt until well combined.
  • Create the Base: Using an electric mixer, blend raw sugar and melted butter, then beat in eggs one at a time.
  • Add Tropical Elements: Mix in mashed bananas, yogurt, dark rum, and vanilla extract until well combined.
  • Combine Mixtures: Gradually add dry ingredients to wet ingredients, mixing on low speed just until incorporated.
  • Add Coconut: Gently fold in ½ cup coconut, being careful not to overmix the batter.
