For the Banana Bread:

- 1 cup raw or turbinado sugar
- ¼ cup butter, melted
- 2 large eggs, at room temperature
- 1½ cups mashed ripe banana
- ¼ cup plain low-fat yogurt
- 3 tablespoons dark rum
- ½ teaspoon vanilla extract
- ½ cup plus 1 tablespoon sweetened flaked coconut, divided
For the Lime Glaze:
- ½ cup powdered sugar
- 1½ tablespoons freshly squeezed lime juice
Instructions
- Prepare Your Setup: Preheat the oven to 350°F and grease a 9x5-inch loaf pan, lining with parchment paper with overhanging edges.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, and salt until well combined.
- Create the Base: Using an electric mixer, blend raw sugar and melted butter, then beat in eggs one at a time.
- Add Tropical Elements: Mix in mashed bananas, yogurt, dark rum, and vanilla extract until well combined.
- Combine Mixtures: Gradually add dry ingredients to wet ingredients, mixing on low speed just until incorporated.
- Add Coconut: Gently fold in ½ cup coconut, being careful not to overmix the batter.
- Prepare for Baking: Pour batter into prepared pan and sprinkle remaining tablespoon of coconut on top.
- Bake to Perfection: Bake for 60 minutes, or until a toothpick comes out clean. Cover with foil if browning too quickly.
- Finish with Glaze: While bread cools, mix powdered sugar and lime juice for glaze. Drizzle over slightly cooled bread.
