Instructions
- Prepare the Pears: Wash, peel, and slice the pears into uniform pieces, removing any bruised spots or core material.
- Combine Ingredients: In a large, heavy-bottomed pot, mix the prepared pears with sugar, water, fresh lemon juice, cinnamon sticks, and minced ginger.
- Begin Cooking: Bring the mixture to a gentle boil over medium heat, stirring occasionally to help dissolve the sugar.
- Slow Simmer: Reduce heat to low and simmer for 2-3 hours, stirring periodically to prevent sticking.
- Check Consistency: Cook until pear slices become translucent and the syrup thickens to desired consistency.
- Prepare for Canning: While preserves cook, sterilize your jars and lids in boiling water.
- Fill and Seal: Carefully ladle hot preserves into sterilized jars, leaving proper headspace, then secure lids.
- Process: Turn filled jars upside down and allow to cool completely to ensure a proper seal.
