4 tablespoons unsalted butter, softened and divided

3 pounds russet potatoes (about 4–5 medium), peeled

1 cup heavy cream

½ cup shredded white cheddar cheese

6 tablespoons grated Parmesan, divided

3 garlic cloves, minced

Salt and pepper to taste
Instructions

Preheat and Prep: Heat oven to 375˚F. Grease a baking dish with 2 tablespoons butter.

Slice the Potatoes: Very thinly slice the potatoes using a mandolin if available.

Mix Cream and Cheese: In a large bowl, combine cream, cheddar, 4 tablespoons Parmesan, and garlic.

Toss the Potatoes: Add the potato slices, coating them well. Season generously with salt and pepper.

Assemble in Dish: Stack potatoes upright in the baking dish. Repeat until all slices are used.

Add Cream Mixture: Evenly pour the excess cream mixture over the potatoes. Sprinkle lightly with salt and pepper.

Butter the Top: Dot with the remaining 2 tablespoons butter.

Bake Covered: Cover with foil and bake for 35–40 minutes.

Bake Uncovered: Remove foil, sprinkle with remaining Parmesan, and bake uncovered for 25–30 minutes, until fork-tender and golden.

Finish and Rest: Broil on high for 1 minute to brown the top. Remove from oven, rest for 10 minutes, then serve.
