Starbucks Pumpkin Cream Cheese Muffins

Create these bakery-worthy muffins that capture the essence of Starbucks' beloved fall treat right in your own kitchen.

  • Total Time: 4 minute
  • Yield: 12 muffins 1x

Ingredients

Scale

For the Pumpkin Muffins:

  • 1½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • 1½ cups pumpkin puree
  • 1 large egg
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon all-purpose flour
  • 1 teaspoon milk
  • ½ teaspoon vanilla extract

Instructions

  • Prepare Your Workspace: Begin by preheating your oven to 350°F (175°C). Then, either grease your muffin tin thoroughly or line it with paper liners for easy removal.
  • Mix Dry Ingredients: In a spacious mixing bowl, whisk together the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt until well combined.
  • Combine Wet Ingredients: In a separate bowl, thoroughly mix the pumpkin puree, egg, cooled melted butter, and vanilla extract until smooth and uniform.
  • Create the Muffin Batter: Gradually fold the wet ingredients into the dry mixture using a rubber spatula. Mix just until combined, being careful not to overmix.
  • Prepare the Filling: Beat together the softened cream cheese, sugar, flour, milk, and vanilla extract until smooth and creamy. Transfer this mixture to a piping bag.
  • Fill the Muffin Tins: Divide the pumpkin batter among the prepared muffin cups, filling each about ¾ full. Create a small well in the center of each muffin.
  • Add the Cream Cheese: Pipe approximately 1 tablespoon of cream cheese filling into the center of each muffin, ensuring it's nestled deep within the batter.
  • Bake to Perfection: Place the muffins in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the pumpkin portion comes out clean.
